Add chicken stock, coconut milk and chicken to crock pot. Set on high for 4 hours.
In skillet - add oil and veggies. I like to stir-fry them about 10 minutes before adding to the crock pot.
As you are cooking the veggies, sprinkle with spices. Pour everything into crock pot.
After 4 hours, take out chicken and cut up, then return to crock pot and turn on low to simmer.
Notes
This soup is creamy and comforting without the grains, pasta, rice and dairy. Not going grain-free, serve this with a great crusty bread or garlic naan. Got a Trader Joe's near you...instead of chopping the carrots, celery and onion use their Mirepox - its already chopped and ready to go!
