curry sauce
my fave is trader joes - either one

cups
rice
cauliflower or Jasmine
3-4
portablla mushrooms
chopped up
1
can
coconut milk
use full fat, NOT light
Instructions
Add curry sauce and coconut milk to pot, bring to simmer
Cook rice (or cheat with easy rice)
Chop up mushrooms, add to curry sauce and simmer until mushrooms or softer
Pour sauce over rice and enjoy
