coconut sugar
Per Quart for the Brine

Himilayan Sea Salt
Per Quart for the Brine

quarts
water

Instructions
Bring 3 quarts of water to boil
Add in sugar and salt
Heat to dissolve brine
Cool quickly with ice
Add turkey legs and wings to brine. Refrigerate till ready.
Heat smoker to 225
Smoke turkey until it reaches 165 degrees internal. Turn up the heat for last 10 minutes if you want crispy skin.
