Add everything to a crock pot (except cilantro), the longer you let it simmer the better the flavors become
Sprinkle with cilantro and serve

This is a super simple meal for everyone on the go. The sweet potatoes add a nice sweet touch to the garlic, onion and tomatoes. You can swap the sweet potato with either pumpkin 6oz. or pumpkin puree 6-8oz. Be sure the pumpkin puree is unsweetened.
