Chicken Tortilla-less Soup
Lower carb version of a Spanich favorite
- 10 oz Enchilda Sauce (You can choose mild or hot)
- 1 can Fire Roasted Diced Tomatoes
- 1 can Black Beans
- 15 oz. Chicken Broth (use vegetable stock if choosing plant based / vegan)
- 1.5 c. Cooked Chicken (Rotisserie works, or you can also use ground chicken thats been browned - omit if choosing plant based / vegan)
Combine all ingredient above in stock pot. Simmer for 30 minutes.
Another great weeknight recipe. You can also put all the ingredients in a crock pot and simmer on low for 4 hours.
Great toppings for this soup:
- Diced avocado
- Cheddar/Mexican Cheese (omit for plant based / vegan / dairy-free)
- Sour Cream (omit for plant based / vegan / dairy-free)
- Onion
- Fresh Cilantro
Can also be served with crushed tortilla chips on top if you still want your "tortillas"
DETOX NOTES:
Skip all added dairy and don't add any corn tortilla chips. Checkout coconut chips and casava flour. Watch added sugar in your enchilada sauce. The Trader Joe's version is great.
