Combine all ingredient above in stock pot. Simmer for 30 minutes.

Another great weeknight recipe. You can also put all the ingredients in a crock pot and simmer on low for 4 hours.Great toppings for this soup:

Can also be served with crushed tortilla chips on top if you still want your "tortillas"DETOX NOTES:Skip all added dairy and don't add any corn tortilla chips. Checkout coconut chips and casava flour. Watch added sugar in your enchilada sauce. The Trader Joe's version is great.
