1/2 cup monk fruitOR 1/4 c monk fruit 1/4c coconut sugar
1 tspvanilla
2eggs
2 1/2 cupsAlmond FlourCan substitute for coconut flour
1/2 tspbaking soda
1/4 tsp salt
1cup chocolate chipslook for 72% Cocao or higher chocolate chips
1/2cupno sugar added peanut butter
Instructions
Preheat over to 350 degrees
Line baking sheets with parchment paper
Mix butter, sugar, peanut butter and vanilla (its best to use a mixer if you have one)
Stir in almond flour, baking soda and salt
Gently stir in chocolate chips
Drop Tbsp sized ball onto parchment lined pan
Cook for 12 minutes

All my kids asked was "Mom, how did you make these? They are different but sooooo good". I wasn't really sure how they'd turn out, but they are amazing - and we make them almost every week. Makes about 24-30 cookies.If you are doing the detox, use a cookie scooper to make these in uniform size. You can have up to 2 per day. These are not low calorie...but they are approved.
