Trust me – DOUBLE this recipe!!!

Chocolate Chip Cookies

Cook Time 12 minutes
Course: Dessert, Snack

Ingredients
  

  • 1/2 cup butter (softened)
  • 1/2 cup monk fruit OR 1/4 c monk fruit 1/4c coconut sugar
  • 1 tsp vanilla
  • 2 eggs
  • 2 1/2 cups Almond Flour Can substitute for coconut flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup chocolate chips look for 72% Cocao or higher chocolate chips
  • 1/2 cup no sugar added peanut butter

Equipment

  • Oven
  • Mixer

Method
 

  1. Preheat over to 350 degrees
  2. Line baking sheets with parchment paper
  3. Mix butter, sugar, peanut butter and vanilla (its best to use a mixer if you have one)
  4. Stir in almond flour, baking soda and salt
  5. Gently stir in chocolate chips
  6. Drop Tbsp sized ball onto parchment lined pan
  7. Cook for 12 minutes

Notes

All my kids asked was "Mom, how did you make these?  They are different but sooooo good".  I wasn't really sure how they'd turn out, but they are amazing - and we make them almost every week.  Makes about 24-30 cookies.
If you are doing our nutrition reset, use a cookie scooper to make these in uniform size.  You can have up to 2 per day.  These are not low calorie...but they are approved because of all the amazing ingredients in them.
