Add coconut milk and garlic to wok and heat until bubbling
Add ground chicken, and cook until just brown
Add in carrots, green onions and pineapple, cook 5-10 min.
Add in soy sauce
Serve over rice

This is a great menu item for a busy evening. Great paired with asparagus or green beans.To make these detox approved - use only cauliflower rice and reduce the pineapple to only 1 cup.
