Blueberry Pancakes

Pancakes (Blueberry)

Simple and easy pancakes!

Ingredients

  • 2 eggs
  • 1/2 cup unsweetened almond milk
  • 1 1/2 tsp olive or coconut oil
  • 1 tsp vanilla
  • 1 1/4 cup almond flour
  • 1/4 tsp baking soda
  • 1 pinch salt
  • 1/2 cup optional frozen blueberries

Instructions

  • Heat up skillet to 350 degrees, or use non-stick frying pan
  • Blend all wet ingredients (I prefer to use a mixer for this recipe)Add in the dry ingredients
  • Add in the dry ingredients
  • Cook - these take a little longer than normal pancakes

Notes

Still want to enjoy your breakfast foods?  Well now you can!  This is a great recipe if you are doing our 21 day detox.  Since these don't have any sugar in them they fit perfectly anytime.  Got fruit in your diet?  Great - add the optional berries in.
And these taste great without any additional syrup but for a real treat add either sugar free syrup, real maple syrup or honey.
