Equipment

  • Cast Iron Pan or Oven Safe Pan

Ingredients

  • 1/4 onion finely chopped
  • 5-6 small potatoes * sliced thin
  • 1-2 garlic cloves
  • 1 c. chopped spinach or any green you prefer
  • 1 c. cooked sausage (pastured or organic) or protein of choice
  • 1/2 c. egg whites
  • 5 eggs
  • 1/2 c. cheese
  • 1 tbsp olive oil or ghee

Instructions

  • Pre-Heat broiler to broil or 425 degrees.
  • On stove top, heat pan with oil/ghee in it.
  • Add potatoes*, onions and garlic, cook 15 minutes until potatoes are tender.
  • Add cooked sausage and and other veggies, cook another five minutes.
  • While cooking, whisk eggs with cheese, then pour into pan.
  • Continue cooking until the eggs begin to pull away from the pan.
  • Finish cooking in the oven 15 minutes or until the top of the eggs are set.
  • Allow to cool for a few minutes and then cut into 8 equal pie slices.

Notes

This egg dish is perfect for breakfast, but it also works well for brunch or dinner.  Try adding additional herbs, spices or different flavors of cheese to change the flavors.  Want to keep it vegetarian - skip the meat all together (add 2-3 additional eggs, or more veggies).
DETOX NOTES: Be sure to use organic pastured eggs, and skip the cheese!  You can find some really tasty chicken and/or turkey sausages.
*Simple and easy tip, get frozen french fries (I love my Trader Joe's), let them thaw overnight and then chop up and cook.  These cook so much quicker than fresh potatoes and make this a super simple easy dinner.
