Almond Bathed Chicken Nuggets
Everything you love about chicken nuggets and none of the guilt.
- 1/2 C. Unsweetened Almond Milk (be sure it does not have vanilla flavor or any sweetener)
- 1/4 tsp Garlic Powder
- 1 C. Almond Flour
- 1 Large Egg
- 1/4 C. Parmesan Cheese
- 1 tsp Italian Seasoning (I used Trader Joes Everything Seasoning)
- 1/4 tsp Salt
- 1/4 tsp Pepper
- 1 lb. Chicken Thighs (Organic - pasture raised please!)
- Olive or Avocado OIl Spray
Pre-heat the oven to 425 degrees.
Cut chicken into nugget sized pieces
Mix almond flour, seasonings and parmesan cheese in one bowl
In another bowl mix egg and almond milk
Prepare baking sheet. I line mine with parchement paper and give it a light spray with cooking oil
Dip nuggest into egg/milk mix and then roll in almond mix
Place on pan
Cook for about 20 minutes; be sure to flip them over half way through cooking
These were such a treat! I highly suggest you use the chicken thighs as they give you the extra fat, making these taste amazing. My kids kept going back for seconds.
We served them with a low sugar bbq sauce, mashed potatoes and asparagus.
