Easy Crock Pot Recipe

  • 2 lbs Grass Fed Pork Tenderloin
  • 1 Tbsp Avocado Oil
  • 12 oz. Fresh Green Beans
  • 1 pkt Barbacoa Seasoning Mix (recommend LaTortilla Factory Cocina Fresca)
  • 12 Low Carb Street Tacos
  • 1 head Lettuce
  • 1 cup Salsa
  1. Add avocado oil to skillet and brown meat on all sides

  2. Add meat to crock pot with seasoning packet and cook for 4 hours on high, 6 hours on low

  3. Warm tortillas and prep sides. Cook green beans and serve.

This is a great week night meal.  Throw it in the crock pot in the morning and then serve it easily in the evening.  Add any toppings you want - if you've got room for extra carbs, you can also throw this in a bun and add your favorite BBQ sauce to it.  Make plenty for leftovers too.
