Blueberry Walnut Collagen Muffins
Protein packed blueberry muffins
- 1/2 C Olive Oil
- 1/2 C Unsweetened Almond Milk
- 1/2 C Monk Fruit Sweetener (Prefer Lanako)
- 3 lg Organic Eggs
- 1/2 tsp Vanilla Extract
- 1/2 tsp Baking Powder
- 1/2 C Chopped Walnuts
- 2 C Almond Flour
- 4 Scoops Collagen Powder (Recommend Thrive Brand unsweetened - adds 40 grams of protein to batter)
- 3/4 - 1 C Organic Blueberries
Preheat over to 350 degrees
Mix all liquid ingredients, including eggs
Add monk fruit and vanilla
Add in walnuts and then almond flour
Stir in blueberries
Use cupcake/muffin spoon if you have one, so your muffins all turn out the same way. Will make 12 large cupcakes or 15 like in the picture.
You will never miss the grains, refined sugar or dairy in these muffins! Best eaten when they are still warm. These do save well in the fridge, and make a perfect snack. The best part - these are 100% detox approved, for the duration of the detox, since there is only a small serving of blueberries in the entire batter. These aren't low calorie though, each packs about 200 calories since they are high in both MUFA and PUFA's.
