Chicken Curry with Cauliflower Rice

A low carb healthy favorite

  • 4-6 Chicken Thighs
  • 1 bottle Trader Joe's Red or Yellow Curry
  • 2 cups Frozen Green Beans
  • 1 bag Frozen Cauliflower Rice
  1. Put 4-6 frozen chicken thighs in slow cooker and cook on low for 4-6 hours

  2. Shred chicken when it begins falling apart. I just use a spoon to separate it.

  3. Add frozen green beans to slow cooker 30 minutes before serving.

  4. Cook the Cauliflower rice (use stir fry pan, you don't need oil)

  5. Add curry sauce 5 min before serving, just enough time for it to heat up.

  6. Place 1 cup cauliflower rice in bowl and top with chicken/green bean curry.

I love this meal.  It's perfect when you are going to be on the go all day and want a yummy hot meal.  Just put the frozen chicken in, go and add the frozen veggies when you get home.  It tastes like you cooked it all day.
