Chicken Potato Soup
Hearty and Comforting Soup
- 1 lb. Chicken Thighs (Organic Free Range)
- 2 cups Chicken Bone Broth
- 1 onion (chopped)
- 4 carrots (chopped)
- 3-4 cloves garlic (fresh is best)
- 1 Tbsp Ghee or Grass Fed Butter
- 1 Tbsp Olive Oil
- 1/2 lb. potatoes of choice (peeled and chopped)
- 1/2 - 1 tsp Cayenne Pepper
- 1/2 - 1 tsp Himalayan Sea Salt
- 1/2 tsp Black Cracker Pepper
Put Ghee and Olive Oil in large skillet and heat up
Add onions and garlic and cook until opaque (this step is extra, you can add all to crock pot)
Add all ingredients to crock pot and let cook on high 4 hours, low 8 hours
When you are on the go, this soup makes a great treat to come home too. Post detox I love potatoes, they make me happy and I incorporate them into my meals 2-3 times a week since I avoid most grains. And, bonus, no one knows how good this soup is because it tastes to good!
