Chicken Salad - Salad

The Classic Chicken Salad, mixed with Salad!

Ingredients

  • 1/2 Rotisserie Chicken Chopped Up
  • 1/2 C. Organic Mayo I prefer the Trader Joe's version
  • 1/3 C. Cashews Chopped up
  • 1 tsp Garlic Powder
  • 1 bag Baby Spinach or Spring Mix
  • Dressing of choice

Instructions

  • Chop up half of a Rotisserie chicken
  • Mix mayo, chicken, spice and cashews together
  • Serve over salad

Notes

Who doesn't love the classic "Chicken Salad".  This meal is super simple and easy to make.
And, you can do multiple variations:
  • Wrap it in tortillas, add lettuce too
  • Serve in bread for a great sandwich, pairs well with cheddar cheese or pepper jack
  • Eat all by itself
DETOX NOTES: WATCH the mayo you use (be sure it is free of industrial seed oils, added dairy, etc), and serve it either on the salad as the recipe calls for, or use a coconut tortilla wrap.
