Chicken Veggie Rice - Less Soup
You'll never miss the rice in this grain free alternative!
- 1 Tbsp Avocado Oil
- 1/2 onion (chopped)
- 3 stalks celery (chopped)
- 4 carrots (chopped)
- 3 cloves garlic (minced)
- 1.5 lb. chicken thighs (organic pasture raised)
- 12 oz. frozen cauliflower rice (chopped)
- 16 oz. chicken stock (organic, bone broth works too)
- 1 tsp oregano
- 1 tsp paprika
- 1 tsp tumeric
Chop all veggies! I like using the Mirepox already chopped mix from Trader Joes.
Add avocado oil to skillet with veggies and cook until tender.
All all ingredients to crock pot, except for califlower rice.
After about an hour of cooking add cauliflower rice.
Let simmer on low and add salt/pepper to taste.
Loaded with veggies this soup is so good. You won't even realize you are missing the traditional rice. BUT, if you can / want the extra grains/rice, add them in the last hour of cooking. Choose a fast cook rice and no more than 1/2 cup un-cooked.
Serve with a green salad for more veggie power, or toast up a loaf of french bread.
