Chocolate Chip Muffins

Chocolate Chip Muffins

Craving chocolate - these will hit the spot - guilt free!

  • Muffin tin (for 18)
  • Muffin Liners
  • 2 C. Almond Flour
  • 4 scoops Collagen Protein Powder (unflavored)
  • 1/2 C. Monk Fruit Sweetener
  • 1/2 C. Cacoa powder (Not cocoa powder...)
  • 3/4 C. Unsweetened almond milk
  • 1/2 C. Avocado Oil
  • 3 Lg. Eggs
  • 1/2 tsp Baking Soda
  • 3/4 C. Chocolate Chips* (1/2 for mix, 1/4 for topping)
  1. Preheat over to 350 degrees

  2. Mix all wet ingredients (milk, eggs, oil)

  3. Add in all dry ingredients except for 1/4c. Chocolate Chips

  4. Use "muffin" scoop and put in muffin liners. Makes approximately 18

  5. Before baking, sprinkle remaining 1/4 c. Chocolate chips on top of muffins.

  6. Bake for 21 minutes
