Chocolate Chip Muffins
Craving chocolate - these will hit the spot - guilt free!
- Muffin tin (for 18)
- Muffin Liners
- 2 C. Almond Flour
- 4 scoops Collagen Protein Powder (unflavored)
- 1/2 C. Monk Fruit Sweetener
- 1/2 C. Cacoa powder (Not cocoa powder...)
- 3/4 C. Unsweetened almond milk
- 1/2 C. Avocado Oil
- 3 Lg. Eggs
- 1/2 tsp Baking Soda
- 3/4 C. Chocolate Chips* (1/2 for mix, 1/4 for topping)
Preheat over to 350 degrees
Mix all wet ingredients (milk, eggs, oil)
Add in all dry ingredients except for 1/4c. Chocolate Chips
Use "muffin" scoop and put in muffin liners. Makes approximately 18
Before baking, sprinkle remaining 1/4 c. Chocolate chips on top of muffins.
Bake for 21 minutes
