Coconut Curry Soup

Yummy comfort food creamy soup, that is dairy free!

  • 1 pound Organic Boneless/Skinless Chicken thighs
  • 1 onion (chopped)
  • 1 can Organic Coconut Milk (not low fat)
  • 4 carrots (chopped)
  • 1 pkg frozen cauliflower rice
  • 1 orange pepper (chopped)
  • 1 jar Trader Joe's Thai Red Curry Sauce
  • 2 tsp olive oil or ghee
  1. Add coconut milk and chicken thighs to crockpot, turn on low

  2. Add ghee or olive oil to skillet, add all chopped veggies and cook until tender

  3. Add vegetables to the crock pot, along with cauliflower rice

  4. After chicken is cooked, pull in out and chop it, set aside

  5. Add curry sauce to veggies in the crock pot. Use immersion blender and cream.

  6. Add chicken back in and simmer until ready to eat.

This soup is super creamy with a hint of sweetness from the coconut.  If you can enjoy some additional grains - server with warm Naan bread or over Jasmine rice.

Makes a perfect complete meal served with a salad.
