Mushroom Curry
Plant Based super simple meal
- 1 jar curry sauce (my fave is trader joes - either one)
- 2 cups rice (cauliflower or Jasmine)
- 3-4 portablla mushrooms (chopped up)
- 1 can coconut milk (use full fat, NOT light )
Add curry sauce and coconut milk to pot, bring to simmer
Cook rice (or cheat with easy rice)
Chop up mushrooms, add to curry sauce and simmer until mushrooms or softer
Pour sauce over rice and enjoy

And if you want more veggies, in the last 5 minutes of simmering add either green beans or broccoli. Can also be made with button mushrooms too.
