Nutty Green Beans
Healthy Version of the Traditional Holiday Green Beans
- 2 cups fresh green beans
- 1 Tbsp Olive Oil
- 1/4 cup slivered almonds
- 1/4 tsp salt
- 1/4 tsp pepper
Wash and prep steam beans, then steam
While green beans are steaming, toast the slivered almonds
In mixing or serving bowl add olive oil, salt and pepper
When beans are ready drain and add to bowl and toss with slivered almonds
Yes, many associated the holidays with the traditional green bean casserole - a bit of canned beans, fried onions, and creamy soup. And this recipe every year ends up in my fridge and I eat the left overs. Not this year, my healthy green bean dish was gone! No leftovers...I even had to make another round so we had it with our turkey, ham and sweet potato leftovers.
Want a couple other additives that are equally as good...
- Add 1 tsp ground garlic or 1 Tbsp fresh chopped garlic
- Add 2 Tbsp chopped bacon
This recipe is also equally good with toasted sunflower seeds for those with a nut allergy. Happy holidays and enjoy!
