These are the perfect 3 bite size muffins for busy mornings, taking on the go, or enjoying as your afternoon snack.
Fruity Protein Muffin
3 Bite Snack or Breakfast
- 1/2 C Unsweetened Almond Milk
- 1/2 C Olive Oil
- 3 lg. Eggs
- 30 g. Collagen Protein Powder
- 1/2 C Monk Fruit
- 1/2 tsp Vanilla
- 1/2 tsp Baking Soda
- 1/2 C Chopped Walnuts (optional)
- 3/4 - 1 C Fresh Fruit (pick something seasonal)
- 2 C Almond Flour
Mix all wet ingredients
Add dry ingredients, including nuts
Fold in chopped fresh fruit
Spoon into muffin cups and bake at 350 degrees for 21 minutes
If you choose berries - this recipe is detox approved! If not doing the detox, any fresh fruit will work and taste amazing.
If you have a nut allergy - you can swap out the almond milk and flour for coconut, but the consistency of the muffins will be a bit different.
Store these in the fridge.
