Pumpkin Almond Pancakes

Guilt Free Pumpkin Yumminess!

  • Skillet set at 350 degrees
  • 3/4 c. unsweetened almond milk
  • 2 c. almond flour
  • 1/2 c. pumpkin puree
  • 1 1/2 tsp oil of choice
  • 1 1/2 tsp baking soda
  • 2 tsp pumpkin pie spice mix
  • 1 tsp vanilla
  • 3 eggs
  1. All all wet ingredients

  2. Add all dry ingredients

  3. Cook on non-stick skillet

If you are craving that yummy pumpkin spice goodness at this time of year these no sugar added gluten free pancakes really hit the spot.  This recipe make 12 good sized pancakes.  If your macros allow add some additional butter before serving, a little honey, real molasses syrup or a sprinkle of cinnamon. 

Be patient with these as they take a little longer too cook...and cooking them with a higher temperature will burn the almond flour.
