Red Lentil Soup

Hearty soup for fall

  • 2-3 cups Chicken (Already cooked and cubed)
  • 2 cups Dry Red Lentils
  • 6 cups chicken broth
  • 1 can fire roasted diced tomatoes (14 ounces)
  • 1 onion (chopped)
  • 4-5 cloves garlic (minced)
  • 1 tbsp olive oil
  • 1 tbsp ghee
  1. Pre-Cook chicken or use store bought

  2. In skillet add ghee, olive oil, onion and garlic - cook until softened

  3. Add all ingredients except chicken to slow cooker / crock pot

  4. 30 minutes prior to eating add chicken

This is a great warm treat when you've got a busy day and you are on the go.  Prep is easy, especially if you've got a rotisserie chicken or leftovers from a previous meal.
