Red Lentil Soup
Hearty soup for fall
- 2-3 cups Chicken (Already cooked and cubed)
- 2 cups Dry Red Lentils
- 6 cups chicken broth
- 1 can fire roasted diced tomatoes (14 ounces)
- 1 onion (chopped)
- 4-5 cloves garlic (minced)
- 1 tbsp olive oil
- 1 tbsp ghee
Pre-Cook chicken or use store bought
In skillet add ghee, olive oil, onion and garlic - cook until softened
Add all ingredients except chicken to slow cooker / crock pot
30 minutes prior to eating add chicken
This is a great warm treat when you've got a busy day and you are on the go. Prep is easy, especially if you've got a rotisserie chicken or leftovers from a previous meal.
