Sausage, Kale & Potato Soup

Sausage | Kale | Potato Soup

Try our imitated Olive Garden soup...all the taste and super healthy.

  • 1 lb. Chicken Sausage (can also use pork)
  • 2 potatoes (sliced)
  • 1/2 onion (chopped)
  • 3 cloves of garlic (minced)
  • 1 Tbsp Avocado Oil
  • 1 bunch of Kale
  • 32 ounces Chicken Stock
  1. Chop up onion and garlic

  2. Add oil, sausage, onion and garlic to skillet, cook for 5-10 minutes

  3. Combine in crock pot ingredients from the skillet and add chicken stock and potatoes. Let cook on low for 4-6 hours depending on your crock pot.

  4. Add chopped kale 30 minutes prior to serving to keep it tender but not super soft. If you've got anyone that dislikes kale in the family, add it with everything else so it softens.

Healthy comfort food!  I think this recipe is better than Olive Garden and it won't leave you feeling guilty.  Serve with a green salad for more veggies or fresh baked naan for some extra dipping goodness.
