Want an easy way to get veggies and your protein - fix up a great spinach salad with a super yummy dressing!

Spinach Salad

  • 6 oz. Baby Spinach
  • 4 Hard Boiled Eggs (Organic Pasture Raised)
  • 1/4 - 1/2 C. Chopped Pepper (Used Yellow)
  • 1/4 C. Chopped Onion
  • 3 Tbsp Olive Oil
  • 2 Tbsp Vinegar of Choice
  • 1 Tbsp Dijon Mustard
  • 1 Clove Minced Garlic
  • 1/4 - 1/2 tsp Monk Fruit Sweetener
  • 3 Pieces *Pasture Raised Bacon (I used Butcher Box...)
  1. In large bowl add spinach, pepper, eggs and onion.

  2. Mix dressing: oil, vinegar, mustard, garlic, monk fruit and salt/pepper to taste.

  3. Sprinkle with bacon if having it.

*if you are doing the 21 Day Detox or the Hormone Solution Detox, omit the Bacon.

If you think you won't eat the entire salad...only dress the part you are going to eat.  This salad saves well over night for a next day meal.
