Stuffed Zucchini
Stuffed Zucchini
My family loved these little boats!
- 4 Zucchini
- 1/2 lb. Chicken Sausage (any sausage will do, but we prefer chicken or turkey)
- 1/2 c. Pasta Sauce (we used Rao's)
- 1 Tbsp Ghee
- 1/4 Chopped Onion
- 1 tsp Minced Garlic
- 1/4 c. Paremsan Cheese (optional!)
Preheat oven to 350 degrees
Cut zucchini lengthwise in halves. Scoop out pulp with a spoon (save it), leaving a 1/4inch wall
Place zucchini cut side down in microwave save dish and microwave for 5-6 minutes until tender but still crisp.
Add ghee to skillet while zucchini is cooking in microwave. Add onion, sausage, zucchini pulp, garlic and pasta sauce to skillet. Cook all the way through.
Spray cookie sheet with olive oil spray. Arrange zucchini and then add cooked sausage mixture to them.
Cook for 5-10 minutes in over to crisp up.
Sprinkle with parmesan cheese (if adding it) and serve.
My kids thought this was meal was going to be way too healthy and actually didn't even want to try it. Well, they were upset when they only got two zucchini boats each. This is one that I will double the recipe next time I make it.
We served it with the cauliflower pancakes from Trader Joes. Felt like a special Italian dinner.
