Taco Rice Bowl
Everything you love about Mexican food without the high carb guilt
- 1 lb. Ground Chicken or Turkey (Organic/pasture raised preferred)
- 1 pkt. Taco Seasoning (Love Thrive Market http://thrv.me/7tSNEB)
- 12-16 oz. Cauliflower Rice (Cooked)
- 1-2 C. Chopped Lettuce
- 1 Tomato (Chopped)
- 1-2 Green Onions
- 16 oz. Black or Pinto Beans (Optional)
- 1/2 C. Salsa (Opt for no sugar added)
- 1 Avocado
- 1 Tbsp Vinagrette Dressing (per person) (Optional - see recipe on our site.)
Cook turkey/chicken following directions on taco seasoning packet.
Cook califlower rice.
If having beans, warm them up.
Serve with rice on bottom, then add lettuce, meat and added veggies.
