Taco Rice Bowl

Everything you love about Mexican food without the high carb guilt

  • 1 lb. Ground Chicken or Turkey (Organic/pasture raised preferred)
  • 1 pkt. Taco Seasoning (Love Thrive Market http://thrv.me/7tSNEB)
  • 12-16 oz. Cauliflower Rice (Cooked)
  • 1-2 C. Chopped Lettuce
  • 1 Tomato (Chopped)
  • 1-2 Green Onions
  • 16 oz. Black or Pinto Beans (Optional)
  • 1/2 C. Salsa (Opt for no sugar added)
  • 1 Avocado
  • 1 Tbsp Vinagrette Dressing (per person) (Optional - see recipe on our site.)
  1. Cook turkey/chicken following directions on taco seasoning packet.

  2. Cook califlower rice.

  3. If having beans, warm them up.

  4. Serve with rice on bottom, then add lettuce, meat and added veggies.

Everything you love about Mexican food without all the guilt from high carb tortillas, rice and beans.  Its also missing all the grains - corn, regular rice and wheat.
