Twice Baked Potatoes

Healthy Version of Potato Skins

  • 3 Ruset Potatoes
  • 1 lb Ground Chicken or Turkey
  • 1 c. Salsa
  • 1/2 c. Shredded cheese (Prefer organic (omit if doing the detox))
  • 1-2 Tbsp Butter (Prefer organic, grass fed (use Ghee if on the detox))
  1. Cook potatoes for an hour in a 400 degree oven.

  2. Cook ground chicken/turkey and put aside

  3. Once potatoes are cooked, scoop out inside leaving skin. Place all ingredients above (yes, the chicken/turkey too) except for the shredded cheese in a mixer.

  4. Scoop the potato mix back into the skins, sprinkle cheese on potatoes. Cook in 350/400 degree oven until cheese melts.

This is a great full meal...just add a veggie.  It also works as a perfect dish to bring to a potluck.

Enjoying our detox program - you can still have this meal, just omit the cheese and use Ghee instead of butter.
