White Bean Chicken Chili
Slow Cooked, High Fiber Yummy Goodness!
- 1 lb. Chicken Sausage (Remove casing)
- 1 onion
- 2 cloves minced garlic
- 2 14 oz. cans white kidney beans (rinse)
- 4-6 cups chicken stock
- 1 Tbsp Ghee or Olive Oil
- 4 cups Chopped Kale
In skillet, brown the sausage, 5 minutes
Add the garlic and onion and continue to cook until onion is soft
Add to crock pot with chicken stock, you will use the same pan for the next step
Add the ghee or olive oil, once heated add kale. Cook about 5-10 minutes until the kale is wilted. Then add it to the crock pot.
Let cook on low 4-6 hours in the crock pot.
This is a great hearty soup paired with super healthy kale.
If you aren't gluten or dairy free; serve with fresh garlic bread or crackers, and sprinkle parmesan cheese on top.
