Zoodle Chicken Sausage

Easy dinner full of veggies

  • 2 cups Zucchini Zoodles
  • 1/2 Red Pepper
  • 8-10 stalks Asparagus
  • 1 Tbsp Crushed/Chopped Garlic
  • 1 pkg Organic Chicken Sausage (use pre-cooked, or allow more time to cook sausage)
  • 2 cups Brown Rice
  • 1 Tbsp Ghee
  1. If not already cooked, cook the sausage and rice (I used the easy cook organic brown rice from Trader Joe's)

  2. Chop asparagus (3 pieces per stalk) and red pepper

  3. Add Ghee to skillet, when warm add Zucchini Zoodles (I actually used the frozen Organic Green Giant from Costco)

  4. Add in peppers, garlic and asparagus

  5. Add sausage (I cut it into slices)

  6. Continue to cook until sausage is heated through and noodles are softened

This is a super easy weekday or weekend meal when you don't feel like cooking but want something yummy with lots of veggies.

Once meat/veggies are cooked, add 1/2 cup rice to the bottom of bowl and add mix on top.  Serve immediately.

*You can also add additional veggies.  Others I will try in the future - onion, mushrooms, brussel spouts.

If you are doing the detox, this meal is approved if you swap the brown rice for cauliflower rice - BONUS - even more veggies!
