Ingredients
- 1/2 C Unsweetened Almond Milk
- 1/2 C Olive Oil
- 3 lg. Eggs
- 30 g. Collagen Protein Powder
- 1/2 C Monk Fruit
- 1/2 tsp Vanilla
- 1/2 tsp Baking Soda
- 1/2 C Chopped Walnuts optional
- 3/4 – 1 C Fresh Fruit pick something seasonal
- 2 C Almond Flour
Instructions
- Mix all wet ingredients
- Add dry ingredients, including nuts
- Fold in chopped fresh fruit
- Spoon into muffin cups and bake at 350 degrees for 21 minutes
Notes
If you choose berries – this recipe is detox approved! If not doing the detox, any fresh fruit will work and taste amazing.
If you have a nut allergy – you can swap out the almond milk and flour for coconut, but the consistency of the muffins will be a bit different.
