- 1 Slow Cooker
Ingredients
- 1 Tbsp Olive Oil
- 2 Poblano Pepper seeded and diced
- 1 Jalapeno Pepper seeded and diced
- 1 Yellow Onion diced
- 5 cloves Garlic minced
- 2 Potatoes chopped
- 2 lg Carrots sliced
- 1-1.5 lb Chicken thighs Organic, pasture raised
- .5 cup Rice
- 1 bunch cilantro
- 1-2 cups Chicken bone broth
- 1 lime juiced
- 1 cup Frozen peas
- 2 tsp Cumin
Instructions
- In large skillet add oil, onions and peppers. (if you have a cast iron pan – use it). After about 5 -10 minutes, add garlic and cook for another 2 minutes.
- In crock pot add chicken, bone broth and veggies – except for Cilantro, lime juice and peas.
- About 15 minutes prior to serving add cilantro, lime juice and peas.
