Chicken Curry with Cauliflower Rice

Ingredients
- 4-6 Chicken Thighs
- 1 bottle Trader Joe's Red or Yellow Curry
- 2 cups Frozen Green Beans
- 1 bag Frozen Cauliflower Rice
Instructions
- Put 4-6 frozen chicken thighs in slow cooker and cook on low for 4-6 hours
- Shred chicken when it begins falling apart. I just use a spoon to separate it.
- Add frozen green beans to slow cooker 30 minutes before serving.
- Cook the Cauliflower rice (use stir fry pan, you don't need oil)
- Add curry sauce 5 min before serving, just enough time for it to heat up.
- Place 1 cup cauliflower rice in bowl and top with chicken/green bean curry.
Notes
I love this meal. It's perfect when you are going to be on the go all day and want a yummy hot meal. Just put the frozen chicken in, go and add the frozen veggies when you get home. It tastes like you cooked it all day.
