Banana Nut Muffin
Sweet Banana Love with No Guilt
- 2 1/2 C. Almond Flour
- 1/2 C. Monk Fruit Sweetener
- 1/2 tsp. Baking Powder
- 1/2 C. Olive Oil
- 1/2 C. Unsweetened Vanilla Almond Milk
- 3 lg. Eggs
- 1/2 tsp. Pure Vanilla Extract
- 3/4 C. Mashed Bananas
- 1/2 C. Walnuts (Measure first, then chop up)
- 3 scoops Collagen Protein Powder (30 grams...my scoop is 10 grams per scoop)
Use a mixer if you have one...preheat oven to 350 degress
Mix oil, monk fruit, baking powder, almond milk and vanilla
Add eggs, mashed banana and nuts
Add almond flour and collagen protein powder. Just mix until combined - don't over beat.
These are divine! Everything you love about home cooked muffins without the guilt. And, if you only eat one of these, they still fit in the less than 15 grams of fruit on our 21 Day Detox.
Feel free to use any protein powder you want, or omit it, but I love the extra umph it adds to these muffins making them the perfect preworkout snack, breakfast or snack.
