Banana Zucchini Muffins

Your powerhouse snack, pre-workout snack or dessert! Less guilt since these have added protein from collagen powder, healthy fats (almond flour and walnuts) and no added sugar!

Banana Zucchini Muffins

Your healthiest muffin yet!

  • Muffin Tins
  • Cupcake liners
  • Oven
  • 3 lg. Eggs
  • 1/2 C. Olive Oil
  • 1/2 C. Unsweetened Almond Milk
  • 1 tsp Baking Soda
  • 1/2 C. Monk Fruit Sweetener
  • 1/2 C. Chopped Walnuts
  • 1 1/2 C. Almond Flour
  • 1/4 C. Coconut Flour
  • 4 scoop Collagen Powder (I used un-flavored)
  • 1/4 C. Flax Seed Flour
  • 1 Very Ripe Banana
  • 1 Grated Zucchini
  1. Add all ingredients and mix

  2. If possible use muffin scoop for even sized muffins. Use muffin liners or these will stick to the pan.

  3. Cook at 350 degrees for 23 minutes
