Equipment

  • Muffin Pan

Ingredients

  • 2.5 Cups Almond Flour
  • 1/2 Cup Monk Fruit Sweetener
  • 1/4 tsp Sea Salt
  • 1/2 tsp Baking Powder
  • 1/2 Cup Melted Butter or Olive Oil Use olive oil to make this Dairy Free
  • 1/4 Cup Unsweetened Almond Milk
  • 3 Lg. Eggs
  • 1/2 tsp Pure Vanilla Extract
  • 3/4 Cup Blueberries

Instructions

  • I love my stand mixer, so if you have one, get it out!
  • Pre-heat oven to 350 degress and line muffin tin.
  • Mix melted butter or oil, sweetener, almond milk and eggs.
  • Add baking powder, salt, vanilla and salt
  • Mix in flour. Once mixed lightly blend in blueberries.
  • For perfect sized muffins, use a muffin scooper. Bake 21-25 minutes.

Notes

Looking for comfort muffins...these are them.  And the best part - they are gluten free, grain free, dairy free (if you use oil instead of butter...ghee would also work too) and no refined sugar. Enjoy!
