Blueberry Muffins

Ingredients
- 2.5 Cups Almond Flour
- 1/2 Cup Monk Fruit Sweetener
- 1/4 tsp Sea Salt
- 1/2 tsp Baking Powder
- 1/2 Cup Melted Butter or Olive Oil Use olive oil to make this Dairy Free
- 1/4 Cup Unsweetened Almond Milk
- 3 Lg. Eggs
- 1/2 tsp Pure Vanilla Extract
- 3/4 Cup Blueberries
Instructions
- I love my stand mixer, so if you have one, get it out!
- Pre-heat oven to 350 degress and line muffin tin.
- Mix melted butter or oil, sweetener, almond milk and eggs.
- Add baking powder, salt, vanilla and salt
- Mix in flour. Once mixed lightly blend in blueberries.
- For perfect sized muffins, use a muffin scooper. Bake 21-25 minutes.
Notes
Looking for comfort muffins...these are them. And the best part - they are gluten free, grain free, dairy free (if you use oil instead of butter...ghee would also work too) and no refined sugar. Enjoy!
