Blueberry Muffins
Guilt free blueberry muffins!
- Muffin Pan
- 2.5 Cups Almond Flour
- 1/2 Cup Monk Fruit Sweetener
- 1/4 tsp Sea Salt
- 1/2 tsp Baking Powder
- 1/2 Cup Melted Butter or Olive Oil (Use olive oil to make this Dairy Free)
- 1/4 Cup Unsweetened Almond Milk
- 3 Lg. Eggs
- 1/2 tsp Pure Vanilla Extract
- 3/4 Cup Blueberries
I love my stand mixer, so if you have one, get it out!
Pre-heat oven to 350 degress and line muffin tin.
Mix melted butter or oil, sweetener, almond milk and eggs.
Add baking powder, salt, vanilla and salt
Mix in flour. Once mixed lightly blend in blueberries.
For perfect sized muffins, use a muffin scooper. Bake 21-25 minutes.
Looking for comfort muffins...these are them. And the best part - they are gluten free, grain free, dairy free (if you use oil instead of butter...ghee would also work too) and no refined sugar. Enjoy!
