Chicken Pesto Quesadilla

Italian Style meets Mexican

  • 10 Low Carb Tortillas
  • 1/2 Rotiserrie Chicken (Cut up into little strips)
  • 1/3-1/2 C. Basil Pesto (We love the Kirkland/Costo brand)
  • 1 C. Mozarella Cheese
  • 2 C. Rao's Marinara Sauce (For Dipping)
  1. Cut up chicken, or if not using store bought rotiserrie, make ground chicken or chicken breast/thigh

  2. Add 1 tsp pesto sauce to one side of tortilla and place in pan.

  3. Add chicken and mozarella, amount listed in recipe should make a full 10 tortillas.

  4. Once melted, fold in half.

  5. Serve with a green veggie and dinner is done.

Simple, easy and a favorite.  When I am in less of a mood to cook I choose this recipe and buy a rotisserie chicken to make is even easier and with lots of added flavor.

DETOX NOTES: Yes, you can do this recipe on the detox, if you have not removed dairy and you use a grain free (no wheat, no corn) tortilla (Coconut Wrap).
