Yes, you can still have taco's and keep to your hormone balanced meal plan!
Chicken Street Tacos
- 1 can Organic Pinto Beans
- 1 Pkg Siete Tortillas
- 1-1.5 lbs Organic Ground Chicken
- 1 Already Made Guacamole (or you can smash two avocados)
- 1 bunch Cilantro
- 1 onion (chopped)
- 1 pasilla pepper (chopped)
- 1-2 tsp Taco Seasoning (My fave: ancho chile powder, primal palate taco seasoning and onion salt, season to taste preference.)
- 1 Tbsp Avocado Oil
- Lettuce (Chopped - for garnish)
Chop onion and pepper (reserve 1/2 onion for serving and guacamole). Add to skillet with avocado oil. Cook for about 5 minutes, then add chicken.
While cooking, heat up beans and make guacamole. I love using the already packaged Wholly Guacamole or similar from Trader Joe's or Whole Foods. I chop up onions and tomatoes and add to it, sometimes with a little garlic salt.
Heat up tortillas, chop up cilantro.
Take one tortilla and fill with beans, chicken and sprinkle with onion/cilantro/lettuce, and add salsa of choice. I prefer a tomatillo or salsa verde base for these tacos.
Serving for your family - add cheese, sour cream, or swap out the tortillas for regular whole wheat or corn.
