Chicken and Rice Soup

Chicken Veggie Rice - Less Soup

Equipment

  • Slow Cooker / Crock Pot
  • Skillet

Ingredients

  • 1 Tbsp Avocado Oil
  • 1/2 onion chopped
  • 3 stalks celery chopped
  • 4 carrots chopped
  • 3 cloves garlic minced
  • 1.5 lb. chicken thighs organic pasture raised
  • 12 oz. frozen cauliflower rice chopped
  • 16 oz. chicken stock organic, bone broth works too
  • 1 tsp oregano
  • 1 tsp paprika
  • 1 tsp tumeric

Instructions

  • Chop all veggies! I like using the Mirepox already chopped mix from Trader Joes.
  • Add avocado oil to skillet with veggies and cook until tender.
  • All all ingredients to crock pot, except for califlower rice.
  • After about an hour of cooking add cauliflower rice.
  • Let simmer on low and add salt/pepper to taste.

Notes

Loaded with veggies this soup is so good.  You won't even realize you are missing the traditional rice.  BUT, if you can / want the extra grains/rice, add them in the last hour of cooking.  Choose a fast cook rice and no more than 1/2 cup un-cooked.
Serve with a green salad for more veggie power, or toast up a loaf of french bread.
