Chicken Veggie Rice - Less Soup

Ingredients
- 1 Tbsp Avocado Oil
- 1/2 onion chopped
- 3 stalks celery chopped
- 4 carrots chopped
- 3 cloves garlic minced
- 1.5 lb. chicken thighs organic pasture raised
- 12 oz. frozen cauliflower rice chopped
- 16 oz. chicken stock organic, bone broth works too
- 1 tsp oregano
- 1 tsp paprika
- 1 tsp tumeric
Instructions
- Chop all veggies! I like using the Mirepox already chopped mix from Trader Joes.
- Add avocado oil to skillet with veggies and cook until tender.
- All all ingredients to crock pot, except for califlower rice.
- After about an hour of cooking add cauliflower rice.
- Let simmer on low and add salt/pepper to taste.
Notes
Loaded with veggies this soup is so good. You won't even realize you are missing the traditional rice. BUT, if you can / want the extra grains/rice, add them in the last hour of cooking. Choose a fast cook rice and no more than 1/2 cup un-cooked.
Serve with a green salad for more veggie power, or toast up a loaf of french bread.
