An avocado salad one of those recipes that are really fast and filling. Avocados are just so good - when you get them just ripe enough. I needed to make a gluten-free alternative to the avocado salads that we normally get at a restaurant. You could also pair it with some seared ahi tuna as I did here.

Avocado Salad
A quick snack or side to any meal
- 1/2 each avocado
- 1/2 each lemon juice
- siracha mayo (sugar free and gluten free)
- gluten-free panko flakes (optional for added crunch)
Slice avocado in half
Either cube the half of the avocado or slice it
Squeeze half lemon over top
Drizzle with siracha mayo
Top with gluten free panko flakes for added crunch
