Mock Mashed Potatoes

The best way to eat cauliflower!

  • 1 large cauliflower head
  • 1 tsp low/no sodium chicken bouilion
  • 2 tbsp ghee (or butter)
  • 2 tbsp cashew milk (or milk, half or half or cream)
  • 2 tsp mixed herbs: garlic, black pepper, onion powder (It's really all about personal preference)
  1. Pre-heat oven to 375.

  2. Boil cauliflower till it falls apart when stuck with a fork.

  3. With food processor, blend all ingredients. Some people like to leave lumps to make it even more like real mashed potatoes.

  4. Spray oven proof pan with cooking spray or coconut oil.

  5. Pour mixture in pan. Add a few pats of butter if you like a more buttery flavor. Sprinkle garlic on top for added flavor.

  6. Bake for 15-20 minutes.
