Oven Baked Taquitos

Crispy Oven Baked Taquitos

All the goodness with no frying!

  • 1 lb Ground Chicken, Turkey or Beef (Use pasture raised organic)
  • 1 can Refriend Beans
  • 2 cans Chopped Green Chiles
  • 1 pkt Taco Seasoning (look for organic with no sugar added - Thrive Market and Sprouts both had great options)
  • 12 Low Carb Tortillas
  • 1 cup Grated cheese or choice (Look for organic)
  • Cooking Spray
  1. Pre-heat over to 400 degrees

  2. In skillet add meat and green chile cans with all liquid

  3. After 5 minutes, add taco seasoning and refirend beans. Add 1/2 the water called for by the recipe, since you kept the liquid with the chiles

  4. Once cooked through, divide evenly in tortillas, adding 1 tbsp of cheese before rolling up tortilla

  5. Place all 12 tortillas, seam side down on a baking sheet. Spray lightly with cooking spray

  6. Cook in over for 10-15 minutes until tortilla browns.

This is a favorite in my house with everyone.  Serve with salsa and veggies. 

Vegan/Vegetarian/Plant Base - use two cans of refried beans and omit the cheese.
