Peanut Butter Cookies

Peanut Butter Cookies

A yummy sweet treat without the sugar!

  • 2 eggs
  • 1/2 cup monk fruit sweetener
  • 1 tsp baking soda
  • 1/2 cup butter
  • 1/2 cup Kirkland Organic Peanut Butter (or any PB with No sugar added)
  • 2 1/2 cups almond flour
  • 1 tsp vanilla extract
  • 1 pinch salt
  1. Pre-Heat oven to 350 degress

  2. Mix butter, peanut butter, eggs and vanilla in mixer

  3. Add baking soda and salt

  4. Slowly add almond flour

  5. Line baking sheet with parchment paper and scoop rounded TBSP size balls onto it, use fork to make cross/hash marks if you prefer

  6. Recipe should make 24 cookies

  7. Bake 12-14 minutes

When you are craving a treat, these hit the spot.  I prefer to use all organic ingredients to really elevate the nutrition factor on these cookies.
