Peanut Chicken
Simply delicious chicken breast tenderloins dipped in a yummy peanut sauce
- 1 lb. Chicken Breast Tenderloins
- 2 tsp Olive Oil
- 2 tsp Sesame Oil
- 1/4 c Peanut Butter (Use un-sweetened / no sugar added PB)
- 1 1/2 Tbsp Rice Wine Vinegar (Be sure it has no added sugar)
- 1 1/2 Tbsp Soy Sauce (Use low sodium / gluten free)
- 1 clove Garlic (minced)
- 1 Tbsp Coconut Sugar
- 1/2 tsp Chili Powder
- 1 lb. Green Vegetable (broccoli, green beans)
Make the sauce first, using small sauce pan.
Add all ingredients except chicken into saucepan, continuously stirring.
Be sure to only heat the sauce enough to stir, don't boil or overcook.
Grill or bake chicken tenderloins; dip and enjoy.
All the taste of a sweet and tangy peanut butter dipping sauce without the sugar. My family loves this dish. We usually serve it with broccoli or green beans and rice or couscous. I tend to have the chicken with the green veggie and add a salad too.
CAN'T STRESS ENOUGH...DON'T BOIL SAUCE OR YOU WILL NEED TO RE-MAKE IT.
