Peruvian Chicken Soup

Peruvian Chicken Soup

Tasty slow cooked soup

  • Slow Cooker
  • 1 Tbsp Olive Oil
  • 2 Poblano Pepper (seeded and diced)
  • 1 Jalapeno Pepper (seeded and diced)
  • 1 Yellow Onion (diced)
  • 5 cloves Garlic (minced)
  • 2 Potatoes (chopped)
  • 2 lg Carrots (sliced)
  • 1-1.5 lb Chicken thighs (Organic, pasture raised)
  • .5 cup Rice
  • 1 bunch cilantro
  • 1-2 cups Chicken bone broth
  • 1 lime juiced
  • 1 cup Frozen peas
  • 2 tsp Cumin
  1. In large skillet add oil, onions and peppers. (if you have a cast iron pan - use it). After about 5 -10 minutes, add garlic and cook for another 2 minutes.

  2. In crock pot add chicken, bone broth and veggies - except for Cilantro, lime juice and peas.

  3. About 15 minutes prior to serving add cilantro, lime juice and peas.

You can substitute cauliflower rice, or leave as is without it, since you have the potatoes providing enough carbohydrates. Want to make this #keto - take out the potatoes and swap all rice for the cauliflower rice.
