Fruity Protein Muffins

These are the perfect 3 bite size muffins for busy mornings, taking on the go, or enjoying as your afternoon snack.

Equipment

  • Muffin Tins
  • Oven

Ingredients

  • 1/2 C Unsweetened Almond Milk
  • 1/2 C Olive Oil
  • 3 lg. Eggs
  • 30 g. Collagen Protein Powder
  • 1/2 C Monk Fruit
  • 1/2 tsp Vanilla
  • 1/2 tsp Baking Soda
  • 1/2 C Chopped Walnuts optional
  • 3/4 – 1 C Fresh Fruit pick something seasonal
  • 2 C Almond Flour

Instructions

  • Mix all wet ingredients
  • Add dry ingredients, including nuts
  • Fold in chopped fresh fruit
  • Spoon into muffin cups and bake at 350 degrees for 21 minutes

Notes

If you choose berries – this recipe is detox approved!  If not doing the detox, any fresh fruit will work and taste amazing.
If you have a nut allergy – you can swap out the almond milk and flour for coconut, but the consistency of the muffins will be a bit different.
Store these in the fridge.
