Pumpkin Chocolate Chunk Muffin

Pumpkin + Chocolate Goodness that is healthy

  • 2 C. Almond Flour
  • 4 Scoops Collagen Protein Powder
  • 1/2 C. Monk Fruit Sweetener
  • 1/2 tsp Baking Powder
  • 1/2 C. Unsweetened Almond Milk
  • 1/2 C. Olive Oil
  • 3/4 C. Pumpkin Puree
  • 3 Lg. Eggs
  • 1/2 tsp Vanilla Extract
  • 1/4 C. Pumpkin Seeds
  • 1/3 C. Chocolate Chunks (Sweetened with either Monk Fruit or Stevia)
  1. Pre-heat oven to 350 degrees

  2. Add dry ingredients (except for chocolate and pumpkin seeds)

  3. Mix in wet ingredients

  4. Scoop into lined muffin cups. Sprinkle top of muffins with 3-4 chocolate chunks and some pumpkin seeds.

  5. Bake for 21 minutes.

Pumpkin + Chocolate Goodness that is healthy - grain free, sugar free and dairy free (if you get chocolate made with real cocoa butter).
