Pumpkin Chocolate Chunk Muffin
Pumpkin + Chocolate Goodness that is healthy
- 2 C. Almond Flour
- 4 Scoops Collagen Protein Powder
- 1/2 C. Monk Fruit Sweetener
- 1/2 tsp Baking Powder
- 1/2 C. Unsweetened Almond Milk
- 1/2 C. Olive Oil
- 3/4 C. Pumpkin Puree
- 3 Lg. Eggs
- 1/2 tsp Vanilla Extract
- 1/4 C. Pumpkin Seeds
- 1/3 C. Chocolate Chunks (Sweetened with either Monk Fruit or Stevia)
Pre-heat oven to 350 degrees
Add dry ingredients (except for chocolate and pumpkin seeds)
Mix in wet ingredients
Scoop into lined muffin cups. Sprinkle top of muffins with 3-4 chocolate chunks and some pumpkin seeds.
Bake for 21 minutes.
Pumpkin + Chocolate Goodness that is healthy - grain free, sugar free and dairy free (if you get chocolate made with real cocoa butter).
